The sweet and vibrant base to this spritzy cocktail is a ginger simple syrup that comes together in a snap. Simple syrup is made by heating equal parts sugar and water until the sugar dissolves. It's great for sweetening drinks and infusing them with fruit, herbs, or in this case, ginger! To make the punch, sweeten tart grapefruit juice with ginger syrup before topping each glass with a prosecco floater. Adorn your drink with pretty-in-pink slices of Ruby Red grapefruit and sprigs of thyme for a memorable touch. Ingredients 1 cup sugar 3 tablespoons chopped fresh ginger (from a 4-inch piece) 4 cups cold unsweetened white grapefruit juice 750-milliliter bottle of chilled Prosecco Directions Bring sugar, 1 cup water, and ginger to a boil in a small saucepan over medium-high, stirring occasionally. Reduce heat to medium; simmer until sugar dissolves and mixture reduces to 1 cup, 4 to 5 minutes. Pour mixture through a fine-mesh strainer into a measuring cup or small bowl; discard ginger. Refrigerate until cold, about 40 minutes. Combine ginger syrup with grapefruit juice in a large punch bowl. To serve, ladle about 2/3 cup punch into glasses and top with Prosecco.
