This recipe was developed to ensure that the ground turkey could sop up all that sauce-y goodness—without drying out. Serve these fabulously messy sandwiches with fresh coleslaw that has a quick red wine vinegar and sour cream dressing. If you end up with leftover coleslaw, add it to a rice bowl. Also, add a little more tomato sauce to any leftover meat, then serve it over pasta. Ingredients Sloppy Joes 1 tablespoon canola oil 1 pound ground turkey 1 onion, chopped 1 clove garlic, chopped 1 8-ounce can tomato sauce ¼ cup dark brown sugar ¼ cup barbecue sauce 1 tablespoon Worcestershire sauce kosher salt and black pepper 4 hamburger buns Coleslaw ⅓ cup sour cream 1 tbsp red wine vinegar kosher salt and black pepper 1/4 small green cabbage, thinly sliced (about 1 cup) 1/4 small red cabbage, thinly sliced (about 1 cup) 2 carrots, grated Directions In a large skillet, heat the oil over medium-high heat. Add the turkey, onion, and garlic and cook, breaking the meat up with a spoon, until browned, 3 to 5 minutes. Mix the tomato sauce, sugar, barbecue sauce, and Worcestershire into the turkey mixture; season with ½ teaspoon salt and ¼ teaspoon pepper. Reduce heat and simmer until thickened, 3 to 5 minutes. Meanwhile, in a medium bowl, whisk together the sour cream, vinegar, ½ teaspoon salt, and ¼ teaspoon pepper. Add the cabbage and carrots and toss to combine. Serve the turkey mixture on the buns with the coleslaw.
