The secret lies in a dressed-up butter enhanced with chopped sun-dried tomatoes, crushed red pepper, smoked paprika, and a spoonful of gochujang, a Korean chile paste that’ll make your tastebuds sing. If you love the spiciness of chili crisp, you’ll adore this dish. Of course, if you’d like to tame down the spice, use less of both the crushed red pepper and gochujang. For maximum enjoyment, go for a wide, flat noodle with rippled edges like mafalde, or swap in pappardelle or fettuccine. Ingredients 12 oz mafalde or fettuccine pasta 1/2 cup unsalted butter 1/2 cup sun-dried tomatoes in oil, drained and finely chopped 1 tbsp gochujang 2 tsp smoked paprika 1/2 tsp crushed red pepper 1 tsp kosher salt 3/4 tsp ground black pepper 2 tbsp olive oil 1 lb peeled, deveined extra-large raw shrimp Grated parmesan cheese, for serving Directions Bring a large pot of salted water to a boil. Cook pasta according to package directions. Reserve 1/2 cup pasta water. Drain pasta and return it to pot. Meanwhile, combine butter, tomatoes, gochujang (if using), paprika, crushed red pepper, 1/2 teaspoon salt, and 1/2 teaspoon black pepper in a medium bowl. Heat oil in a large skillet over medium-high. Add shrimp and remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook until shrimp are lightly browned and just cooked through, about 4 minutes. Add 1/4 cup reserved pasta water; cook, stirring, until water has mostly evaporated, 1 to 2 minutes. Toss butter mixture and shrimp with drained pasta. Add remaining 1/4 cup reserved pasta water as needed to loosen sauce to desired consistency. Top with black pepper and cheese.
