There’s a subtle sweetness from summer corn, smokiness from adobo sauce, and brightness from lime and cilantro. A zesty marinade coats the steak before it hits the grill, while okra and corn on the cob grill alongside it. The okra is skewered to avoid any falling through the grates, and before serving, it's chopped and the corn is cut off the cob for a salad-like situation. Pro tip: ensure the grill is well oiled to avoid any sticking. Ingredients Canola oil, for grill 3 tbsp. adobo sauce (from a 7-oz. can chipotle chiles in adobo sauce) 1 tbsp honey 3 tbsp olive oil 3 tbsp lime juice 1 1/2 tsp kosher salt 1/2 tsp ground black pepper 1 lb flank steak 4 cups (10 oz.) fresh okra 4 ears fresh corn, husked 2 tbsp chopped cilantro Directions Lightly oil grill grates or a grill pan and preheat to medium-high. Whisk together adobo sauce, honey, 2 tablespoons oil, 2 tablespoons lime juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Reserve 1/4 cup adobo sauce mixture in a small bowl; set aside. Rub remaining mixture over steak. Let stand at room temperature for 15 minutes. Meanwhile, thread each of 4 (8-inch) skewers with 5 or 6 okra. Season steak with 1/2 teaspoon salt. Grill, covered, until cooked to your liking, 4 to 5 minutes per side for medium-rare (135°F). Transfer to a cutting board and let rest. Grill corn and okra skewers, covered, turning occasionally, until charred, 6 to 8 minutes. Remove okra from skewers and roughly chop. Slice kernels from corn. Place okra and corn in a medium bowl and add cilantro. Toss with remaining 1 tablespoon oil, 1 tablespoon lime juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Thinly slice steak and drizzle with reserved adobo sauce mixture. Serve with corn and okra, topped with cilantro.
