A bit of time in the oven and you've got fries at home without the frying. And there is no better way to dress up french fries than with parsley and garlic. The secret here is to toss the fries with the parsley and garlic mixture as soon as they come out of the oven to make sure the fries cling to this heavenly topping, and then put them back in the oven for another minute until the garlic is fragrant. This is a simple way to upgrade fries, and make it easy on yourself if hosting a party. Serving suggestion: steak! Ingredients 2 28-oz. pkg. frozen shoestring french fries, such as Ore-Ida ¼ cup olive oil 1 teaspoon kosher salt 1 cup roughly chopped fresh flat-leaf parsley leaves and tender stems 2 cloves garlic, roughly chopped (2½ tsp.) Flaky sea salt, for serving mayonnaise and ketchup, for serving (optional) Directions Preheat oven to 450°F with racks in upper and lower thirds. Place fries in a large bowl; toss with oil and kosher salt. Spread fries evenly on 2 large, rimmed baking sheets. Bake until golden, 30 to 35 minutes, tossing fries and rotating pans halfway through. Meanwhile, place parsley and garlic on a large cutting board. Using a chef's knife, chop parsley and garlic together until finely chopped. Alternatively, process parsley and garlic in a mini food processor until finely chopped, about 15 seconds. When fries are cooked, remove baking sheets from oven and immediately toss fries with parsley-garlic mixture. Return baking sheets to oven and bake until aromatic, about 1 minute. Sprinkle fries with flaky sea salt. Serve with mayonnaise and ketchup for dipping, if desired. Time it Right Here's how these fries and the Hanger Steak With Worcestershire Butter can share the oven: Cook the fries for 25 minutes, then remove them. Transfer the steak in and cook until done.
